Loaded Jack Sweet Potatoes

Heres a tip: Trying to loose weight? Try doing something simple which will give you all you need in one meal, with few calories. Normally you hear of the loaded jack potato, but here is something you probably haven't yet tried. Instead of using a potato use sweet potato for that soft sweet flavor. Add ground beef, spinach and cheese and there you have it. Your healthy and complete meal for the day. You have your starch, your vegetable and your meat all in one. Give it a try. Pan-Fried Beef Steak

Nothing like a well seasoned, thinly cut pan fried piece of steak with a few lightly sautéed onions on top for added flavor. Goes excellent with the rice and black beans recipe that I shared with you  a few days ago. For that perfect Brazilian meal. But a great piece of steak to me is not bloody and raw and yet not tough and chewy. But instead tender, fully cooked (well done) with no red inside and still soft. Pan Fried Steak Servings: 6 Servings Prep Time: 10 minutes Total Time: 25 minutes Source: Elise Jackson Ingredients 6 pieces of beef steak 1 onion sliced 2 tbsp oil seasonings: salt, black pepper, all purpose seasoning, garlic powder Directions Rinse your beef filets in water and then season. Red Beans and Rice (Louisiana Style)

  Red Beans and Rice (Louisiana Style) Servings: 6 Servings Prep Time: 10 minutes Total Time: 45 minutes Source: Esther and Rick ( I tweaked the recipe a little) Ingredients 1 Andouille Sausage (sliced or diced) 2 cups white rice 6oz kidney beans 1/2 onion diced 1/2 bell pepper diced seasoning: onion powder, garlic powder, salt and spices(optional) Separately cook your rice  Find great rice recipe here  and your beans follow these directions here for great beans  Set both aside. In a small pot, cook sausage well on medium high heat until nice and crisp, then add in your onion and bell pepper and sautee it all together. Mix in the sautéed mixture your rice and your beans into a big container and with a wooden spoon softly mix it all together until well distributed. Add seasonings.  Your all set, ready to enjoy. Brazilian Black Beans

If you hang around Brazilians enough, you will come to know that one of their favorite foods is rice and black beans. Even better than just the plain black beans is feijoada (recipe coming soon) which is your typical black beans with an assortment of meats added to it and cooked together into a rich black bean stew, is the best way I can describe it. Black beans is so much a part of the brazilian culture, its eaten in most household everyday. A typical traditional meal would be something like white rice, black beans and fried chicken filet or rice, black beans and a fried beef filet etc.. In American we don't tend to eat beans nearly as much as is common in the Brazilian custom, but tasting that delicious combination of freshly made white rice with the perfect creamy textured black beans nicely spooned on top... Brownie Ice Cream Sandwich

Yum, just had this the other night to fancy up my plain brownies. Came out delicious. Try it next time you make your brownies. Here I wanted to make something rally quickly so I used the store bought boxed brownie mix and made it according to the instructions on the box. Then once cooled, I put a brownie on the bottom and then layered on top of it, 2 scoops of ice cream  (pistachio almond ice cream), banana slices, strawberry slices, another brownie and then a whipped cream on top of it all. Optional: you can add a drizzle of chocolate or caramel sauce to top it off.  Absolutely amazing.   Have a sweet tooth? Carrot Cake to me is one of those ridiculously great comfort foods. I can't get enough of it. You have your carrot, pineapples and sometimes raises and nuts inside of the light batter with your light yet not too sweet cream cheese frosting on top. OMG, what else can you ask for in a cake. Granny's Carrot cake is homemade from scratch so you control the sugar and you know what ingredients you put in. No fake ingredients here. Its not complicated to do.
