Granny's Carrot Cake

 

Have a sweet tooth? Carrot Cake to me is one of those ridiculously great comfort foods. I can't get enough of it. You have your carrot, pineapples and sometimes raises and nuts inside of the light batter with your light yet not too sweet cream cheese frosting on top. OMG, what else can you ask for in a cake. Granny's Carrot cake is homemade from scratch so you control the sugar and you know what ingredients you put in. No fake ingredients here. Its not complicated to do. Just follow the instructions below to get your cake done and eaten within the hour.

Granny's Carrot Cake

Ingredients
1 1/2 cup vegetable oil
2 cup sugar
4 eggs
2 1/2 cup flour
2 tsp baking soda
2 tsp cinnamon
1 tsp vanilla extract
1 cup raisin
1/2 cup finely diced pineapples
1 cup chopped walnuts
2 1/2 cup shredded carrots

Cream Cheese Frosting
2 Cream cheese
6 oz butter
1 tsp vanilla extract
2 cups confectioners sugar

Directions
Preheat your oven to 350F

Butter and flour your cake pan or muffin tins (I used a jumbo muffin pan as pictured above) 

Beat together in a large bowl your oil, sugar and mix until smooth. Add in your eggs and vanilla extract and mix again. Set aside.

In another container sift (pour your ingredients through a fine strainer in order to allow the flour to come out even finer than it already is) sift together your dry ingredients. The flour, cinnamon, baking soda. Once completed sifting. Mix in your dry ingredients into the wet ingredients bowl and mix well until all incorporated.

In another separate bowl add in your raisins, carrots, walnuts and pineapples and add 1 tbsp of flour. Using a wooden spoon carefully mix the flour into these ingredients and then add this mixture into the rest of your batter and carefully mix it all together with the wooden spoon. Using a folding mixing technique.

Bake for 45 min to 1 hour for a cake or until it is no longer wet and a knife stuck in the center comes out dry. If you are making cupcakes it should be ready in about 25 - 30 minutes depending on the cupcake sizes.



Whilst the cake is in the oven, start working on your cream cheese frosting. Simply take a large mixing bowl and mix all of your cream cheese frosting ingredients together. The sugar, vanilla, butter and cream cheese. Mix slowly until smooth. Set aside.

Once the cake is out of the oven, let it cool for a few minutes and then spread your frosting on the cake, slice and serve. If you would like you can decorate it with carrot and pineapple peices.
