Our Jamaican Styled Lunch

My hubby enjoying some good home cooked Jamaican food Oh but so delicious. For lunch we had Rice and Peas, Stew Chicken and boiled sweet potatoes with pumpkin. Each had a unique flavor and was really well prepared. The Rice and Peas which is rice and red kidney beans is prepared in a new way to what I have ever done so as I am sharing all of these recipes for you. I am keeping them for myself as well. That way whenever I want to make it I can also come to my blog, get the recipe and cook  ;  ) enjoy... Rice and Peas 1 cup Basmati rice 1 cup water 1/4 cup coconut milk a little ginger (mashed up) 1/4 cup (drained) canned red kidney beans Put your water in a pot on high and let it boil. Once boiling add in your coconut milk, mashed ginger, rice and red kidney beans. Mix all together and let boil for about 30 seconds and then reduce the heat to low. Leave on low and allow to cook for about 15 minutes or until the rice is nice and soft.  Your done. Fluff your rice wit

Jamaicas key Ingredient

One of the Jamaican Cuisines main ingredient in many dishes. One of the most used items to cook with. Is GINGER..... I've tasted Ginger in juices, cakes, chicken stews, rice, jams and so much more. One of Jamaicas key ingredients. I will show you recipes using ginger next time.But I now have a new found respect for ginger  :  ) Ohhhh.. Did I mention I didn't like ginger before.... But the way they include it in the meals gives off this amazing flavor without the overpowering strong taste of pure ginger. Absolutely amazing Really good

Kerrys 'Coconut Dream'

Meet Kerry, She is a wonderful friend of mine who happens to be a Jamaican. She is the great cook that I spoke about in my blog post from yesterday. She has the right touch when it comes to cooking. She is teaching me all about the Jamaican Cuisine. This is Kerry As I mentioned in Yesterdays post. I am sharing one of her recipes with you. She made this 'Coconut Dream' and it was a dream indeed. It finished in about 5 minutes  :  ) Ingredients 1 fresh coconut shredded condensed milk 1 pinch freshly ground nutmeg 3 whole cloves 1tbsp butter 1tsp vanilla extract 1 coconut boxed cake mix Preheat oven to 350F or 170C All you do is get a boxed coconut cake, add 1 cup of freshly shredded coconut to the cake mix. Add in your milk, oil and eggs as the box describes and blend it all together in the blender. Grease a muffin tray (In this case she used a flower design muffin tray) and put your cake mix in the tray and into the oven for about 20 - 30 m

As I am here in Jamaica. I get the privilege of trying all types of Jamaican cuisine. I am being well fed by an excellent Jamaican cook 'Kerry'. I will share one of her really good recipes with you all tomorrow. Their water is so clean and clear. Oh my gosh... I have to show you this ocean water. Look how crystal clear this. It looks like drinking water and you can completely see the bottom. Jamaica is so extremely beautiful and tropical. Absolutely amazing. Carne Seca na Moranga

This last week as I was in Brazil, I had the pleasure to go to Bahia. And  there I had the greatest dish ever. It is as delicious as it is unique. I have never seen nothing like it before. But my oh my was it delicious. Doesn't that picture up there look good. It really is THAT good. You HAVE TO try this. If you don't you are really missing out. Big Time. It was by eating great dishes like this that I gained 10lbs in 1 month (Who does that...) 10lbs its unbelievable. But if I could do it over again I would do it all the same I wold still eat all these great meals. It was that worth it. Really...
