Big Plump Yum-a-lishious muffin

Image
In South Africa I found this little Café called 'Mug & Bean'. This Café had the best muffins I have every tasted. They have so many nice flavor combinations and they are so huge. Everyone has to try it at one point. So let's make our own 'Mug & Bean' at home. They had flavors such as poppy seed, banana, blueberries, date and nut, chocolate chip and more Follow my Plump muffin recipe and combine your own flavors for a Yum-a-licious muffin at home. Ingredients 1 cup butter 2 cups sugar 4 eggs 2 3/4 cup flour 3 tsp baking powder 1 cup milk (filling of your choice - chocolate chips, banana, carrot, dates, blueberries, strawberries... Be creative) Firstly preheat your oven to 350F, Then get a big muffin tray and butter it (In order for your muffin not to stick to the tray(another option would be to put in a muffin cup). In a big bowl, mix in your butter and sugar, then mix in the eggs. After mixing in the eggs, mix in the fl...

My home town trip to "Cape Verde"

Image
Sorry for taking so long to post about our trip and experience in CapeVerde. I wanted to make sure that this post was extra Special. In Cape Verde we went to Praia and Sao Vicente. This Billboard says "These eyes have already seen the world, but the heart never leaves Cape Verde" Really cute My mom, grandmother, uncles, everyone in my family is from Cape Verde. Except for me and my twin 'We are American' So I can safely say I am Cape Merican  :  ) Cape Verde is an extremely nice place. It is a Country made up of a whole bunch of little islands. My family is mostly from the island of Brava. They say it is one of the most beautiful Islands of CapeVerde. They call it the Island of the beautiful flowers and beautiful women  :  )   Look at that Gorgeous view..... We had a few great events there with some youth who came out to the event 'Knowing how to say No...' There are so many nice views in Cape Verde, to me it s...

The Biggest burger I have ever seen

Image
How to make ' The biggest burger you have ever seen'  Wow, look at the height of that thing. Beats a McDonalds 'Big Mac' or Burger kings 'Whooper' by a long shot  :  ) This was the first time in my life that I have ever seen a cheese burger this big. It can easily be done at home for a meal or as a 'show stopper' to show friends. I guarantee that this will not be the healthiest thing you have eaten but nevertheless there are some who would enjoy it. Very simple to make. All you need is your hamburger bun, 4 burger patties, 5 slices of cheese, pickles, mayonnaise.  Make your sandwich as you choose. Just make sure to stack it neatly or else you burger will go crashing down. Set your two buns aside with mayonnaise. Then stack together your burgers with cheese. Eg.burger, pickles, cheese, burger, pickles until the very top. Then place this entire stack into the oven for about 5 - 10 minutes just enough to let the cheese melt nicely. Then take your b...

Portugal

Image
From Africa we took a 16 hour flight to Portugal woooo.... what a long trip. 8 Hours from South Africa to Dubai then Rush, Rush, Rush to catch the next flight from Dubai to Portugal. We arrived in Portugal had a great 'Shoulda Been Dead' event and had the opportunity to try some great Portuguese dishes. The food in Portugal is really tasty. One thing that I noticed is they really like  Bacalhau (Cod Fish) and heavy cream on their foods. They really seem to love seafood. Everything that I tasted in Portugal was really good. I had the opportunity to try some great Bacalhau at a restaurant but for the life of me I cannot remember the name of the restaurant ' What a shame' but thats okay because every where you eat there is super delicious. I don't know how many times I ate 'Pastel de Natas' such a great treat. Honestly I ate these too many times. I loved Portugal.

Africa 'My second home'

Image
Dear blog viewers, here is a bit of what went on in Africa for you to see. After going to Botswana we visited 'South Africa'. In the time spent in South Africa we had  a few great youth events held against drugs and crime. My husband Damien spoke about his past and how he was able to get out of this lifestyle. He also gave everyone present the opportunity to get one of his books 'Shoulda Been Dead' his true life story and step to step advice on how to change. It is priceless. This opportunity I am having to travel with him. There is no price that can be put on the results that we are seeing through these tours. So many youth coming to us saying how much of an impact this has made in their lives. So many people deciding to leave this type of lifestyle behind and make better choices from now on. It's just amazing. That is what inspires and keeps us going. Just seeing results like these... South Africa, I truly call it my second home. It is amazing. I was i...
