Stuffed Chicken Balls ( Coxinha de galinha sem massa)

    
 


Very healthy, full of protein and great as a snack or light dinner. Its comparable to a well known Brazilian finger food that is one of the most common finger foods in Brazil called 'Coxinha de galinha',  its truly very delicious but the original recipe is made out of dough,  and then battered and deep fried so needless to say its not for a healthy eating at all, very fattening.
Heres a healthier, non fried, no dough version without loosing the delicious taste.

Ingredients
2 chicken breasts
2 scallions diced
1 carrot shredded
1 egg
1 cup flax seeds
4oz cream cheese
optional: small fresh mozzarella cheese

Directions
Preheat oven to Low- Broil, 

Start of by first thoroughly cleaning your chicken breast and then season it as you please, find my choice of preferred seasonings here. In a pot on medium low heat cook your chicken. Place it in the pot and cover it.  Thoroughly cook the chicken on both sides until lightly browned and fully cooked. 

Shred the chicken, add in your carrots and scallions and then set aside to cool. Add in about 3 tbsp of cream cheese to the shredded chicken mixture and mix in with your hand until it becomes sticky and manageable to shape into a ball. Make it flat into the palm of your hand and place a 1/2 tsp of cream cheese or a small mozzarella ball in the center and shape it into the ball. Feel free to stuff it with whatever you want, be creative. Once you are done stuffing and rolling everything, set aside.

In a bowl whisk your eggs with a little water set aside. Pour your flax seeds onto a plate and season it with a little all purpose seasoning and garlic powder and set aside. Dip the stuffed and formed chicken balls into the egg wash mixture and then into the flax seeds. Place  onto a flat baking tray. Place  in the oven for about 4-5 minutes. Just to form a crunchy crust. Be careful to keep an eye on it in order for it to not burn.
