Light Snack

Heres a great snack idea. Simply a banana cut in half with peanut butter spread on top, honey drizzled on top and then sprinkled with granola, nuts and raisins/cranberries. An excellent light yet delicious snack thats extremely nutritious and very filling. Better than grabbing bread, a candy bar, chips, cookies or anything else unhealthy. Stuffed Chicken Balls ( Coxinha de galinha sem massa)

       Very healthy, full of protein and great as a snack or light dinner. Its comparable to a well known Brazilian finger food that is one of the most common finger foods in Brazil called 'Coxinha de galinha',  its truly very delicious but the original recipe is made out of dough,  and then battered and deep fried so needless to say its not for a healthy eating at all, very fattening. Heres a healthier, non fried, no dough version without loosing the delicious taste. Spinach Ricotta stuffed Crepioca

 I came across this recipe not too long ago and I absolutely fell in love. If you are looking to try something different heres the right recipe for you.  I have been familiar with the sweet crepes and oh, how I love them. Theres nothing better than a strawberry, banana, nutella crepe with a dollop of vanilla ice cream melting on top of that warm yet decadent crepe. My goodness, its absolute amazingness. Anyway, this crepioca is very similar except it has a touch of tapioca flour which is made out of cassava and it is savory instead of sweet. Its a thin, light soft crust oozing with 3 amazing flavors of soft creamy cheeses melting in your mouth wth every bite. Its Mango Madness in here, Oh my goodness. This is not one of those low calorie guilt free eatings. But oh boy! is it worth every calorie. I had to ask my husband to take it away from me just yesterday, because I was about to eat the entire thing... its just that good. With every bite it leaves you wanting more.  The dissolve in your mouth creamy mango flavored deliciousness will absolutely make you fall in love with this yummy mango mousse. A No Mess, 3 Ingredient, 5 Minute Dessert. This is my go to dessert Especially good for those days that you want to whip up something sweet and don't want to take forever in the kitchen. Extremely delicious and very creamy. Can be served frozen as an ice cream also. . I absolutely love this key lime dessert. I enjoy the tart flavor combined with the creaminess of the whipped heavy cream reminds me of like a gelato. Even if your not such a key lime fan, try this recipe with a maybe 1 or 2 less limes in it and still get that creamy mousse with a hint of lime flavor. Give it a try and see for yourself. This is a Brazilian chicken pie. So delicious. The secret is in the dough. This crust is so extremely unique and soft, literally melts in your mouth.You've gotta try this. Fluffy Chicken Pot Pie Servings: 6 Prep Time: 10 min Total Time: 40 min Source: Elise Jackson Ingredients Pie Dough 1 cup butter 2 cups flour 1 tbsp baking powder 2 egg yolks 1 tsp salt Mix it all together all at once WITH YOUR HANDS. Yes, it is messy but is very needed. Mix it all well until the dough looks like... well dough  :  ) Preheat oven to 350F or 170C Then take a pyrex and press some of the dough all over the bottom of the pyrex. Brazilian Flan

This dessert is well known in the Hispanic and Portuguese culture and is extremely delicious. For you who don't know what this dessert is. The only way that I can explain it to you is like a firm, creamy, carmel custard and 'oh' so good  :  ) Many people have tried to make this and as simple as it is messed up and it ends up tasting too eggy. If you know what I mean.... The trick to have a great flan is in the number of eggs you use. You can make it in various flavors regular just as it is, coconut, parmesan cheese (sounds gross but is really good) orange etc. You just add  a little of it to the mix. This dessert is really cheap and easy to make as it does not require much ingredients but if you were to buy it at a restaurant. (especially here in the USA) you are going to pay an arm and leg for a slice. Recipe of the Day: Heres something fun to do with the kids. A Great finger food and easy enough to do in just 30 min and enjoy with the family. Take a look Dorito Crusted Popcorn Chicken Servings: 4 Prep Time: 10 min Total Time: 30 min Source: Elise Jackson Ingredients 2 lb chicken breast (cut into cubes) 1 cup mayonnaise 2 bags Dorito chips Preheat your oven to 400F, Clean your chicken breast in vinegar or lemon and rinse well to remove any slime. Pat dry and Cut chicken breasts into cubes and place into a bowl add mayonnaise and move it around in the bowl to coat the chicken pieces with mayonnaise. Take your Dorito chips and either blend or crush it using a rolling pin until it is like breadcrumbs. Roll your mayonnaise chicken into the breadcrumbs until it is coated.
