BBQ Sweet Potato Shepherds Pie

Believe me this is definitely a crowd pleaser in my house. An interesting twist to an old classic shepherds pie Recipe. Something so simple and seemingly weird. But you've gotta try it to see how good it really is. Here is how:


BBQ Sweet Potato Shepherds Pie

Ingredients
6 sweet potatoes
1.5 lb ground beef or turkey
1/2 onion diced
1/2 pepper diced
2 garlic cloves crushed
1/4 cup of milk
2 tbsp butter
1/2 cup bbq sauce (May need a little more)
1 tbsp olive oil
Seasoning: Lawrys all purpose seasoning, black pepper, garlic powder, onion powder, salt

Fill a big pot with water and set it on the stove on high heat. Till it starts to boil.  Peel and cut your sweet potatoes into big chunks and put it into the boiling water. Let it cook for about 15 minutes or until the potatoes are very soft. Drain the water and allow your potatoes to cool for about 5 min. Using a hand held electronic mixer. Mix your potatoes until they are smoothly mashed. I find this to be the smoothest way to have whipped up mashed potatoes. But you can do many different ways. Use a wooden spoon, use a for or even a potato masher if needed. But once smoothly mashed add in your butter and milk (Note: Make sure to add in only a little at a time because you may not need the entire thing. Depending on how thin or thick you lick your mashed potatoes) Once your milk and butter are added, mix well and set aside.

As your potatoes are cooking you can work on the ground meat. Put about 1 tbsp of olive oil into a pot and on medium heat sautée in your garlic, pepper and onions. Cook until just starting to brown and add in your ground meat. Cook until everything is nice and browned. Lightly season your mixture and add in bbq sauce. Now I wrote 1/2 cup but this is totally up to you and how much you like bbq sauce. Sometimes I put a little less and sometimes I put in a little more. Add as much or as little as you like. Cook on low for about 2-3 min until the sauce starts to boil. Remove from fire and set aside.

Get a pyrex and layer it all up, starting with half of your mashed sweet potatoes mixture at the bottom, then directly on top of that add your ground meat mixture, then on top of it all add the rest of your mashed sweet potatoes. If you want you can add an extra layer of meat on top.

Thats it your done. Very simple to make.

Extra tip: If you are a cheese lover you can even sprinkle a little cheese on top and bake in oven under 350F for about 5 min until the cheese melts
