Seafood Gnocchi


I had a few guests come over my house just the other day and I wanted to make something amazing; Something I hardly ever make and something really delicious for my special guests. One by one I will put up the recipes for each thing that I made. Everything in the menu was really yummy.

I decided to make Gnocchi from scratch along with a seafood white wine sauce. For those of you who are not familiar with what is Gnocchi; it is compared to pasta but yet it is not pasta. It is made out of potatoes but does not taste like it. It has a inquired taste of its own and absorbs well the flavor of whatever sauce you put it in. For instance, if you dont like seafood make your own sauce. You can make a Gnocchi with a red ground beef sauce or with a completely different sauce all together and it will taste great.

With this recipe. The Gnocchi as you see is really simple to make. Can be done in a matter of minutes. Its basically making mashed potatoes and then just adding flour to the mixture to thicken it;Thats Gnocchi. And it is melt in your mouth delicious. Take a look. Gnocchi

Ingredients - (Feeds about 4 - 5 people)
8 Potatoes
1/2 cup Butter
1/4 cup milk
flour as needed

To make Gnocchi all you need to do is:
Take you potatoes completely peel and cut them into big chunks. Place them into a pot of boiling water. Let it boil for about 15 minutes or until your potatoes are really soft, Try poking it with a fork or knife and if it breaks apart that means its soft enough.

Drain your water and mash your potato chunks with a wooden spoon or fork until smooth. Once your potatoes are mashed return them to either the same pot or a big bowl and add in your butter and milk mix until well incorporated. (It should look exactly like mashed potatoes) Now what you do is add in flour a little at a time and keep mixing it in with a wooden spoon until well incorporated. You will see that as you continue to add flour the thicker it will become. You want to keep adding flour until it thickens and becomes like dough (play dough) where it is moldable and no longer sticks to the spoon or your hands.



Prepare a big pot of boiling water. Then once you have your dough. Roll it out onto a slightly floured counter and cut them into small squares.




Take these small squares and put them into the pot of boiling water A LITTLE AT A TIME.

Very important step: Once you place your Gnocchi into the pot of water keep an eye on it because as soon as you throw them in the will sink directly to the bottom of the pot. But within about 1 - 2 minutes you will see them floating. As soon as they float that means that they are done. Immedietly as soon as this happens take a big spoon with holes in it and scoop them out (allowing all the water to drain) Place them into a pyrex or container that you will be serving it in.

Once they are all done and placed in your serving dish drizzle a little bit of oil on top and shake it around a bit in order to evenly distribute the oil. (This will help it to not stick together) DO NOT TOUCH IT TO MUCH OR MIX IT WITH THE SPOON ONCE DONE. JUST LEAVE IT ALONE BECAUSE AT THIS POINT THEY WILL BE VERY SOFT. If you were to go taste it at this time you will see that it is extremely bland and tasteless. The Gnocchi serves as the softness of the meal but all the flavor comes in the sauce.


The Seafood White Wine Sauce

1 lb Jumbo Shrimp
1/2 lb scallops (chopped into slightly big bit size chunks)
1/2 lb crab meat (imitation crab meat can also be used)
2 cups heavy cream
2 tbsp White wine
1/2 Onion (diced)
salt, pepper
Optional - Chives

Really simple to make. Take a big frying pan and put in a little oil. But your fire on high heat. (If you have any of the seafood from frozen. Make sure to thaw it out completely by removing it from the bag and running it through cold water for a few minutes.) We do not want any water in the pan at all or this will make it very watery and we do not want that. Mae sure to not have any frozen ice on your seafood if it is from frozen.

DO NOT LOWER YOUR FIRE. KEEP IT ON HIGH HEAT THE ENTIRE TIME AND MOVE QUICKLY THROUGH ALL THESE STEPS. With your Oil in the pan and your fire on high heat. Add into the pan your onions and let it heat up for less than a minute just to barely brown. Immediately throw in your scallops and fry around for about one minute, add in your shrimp and crab meat. Mix around for about 2 more minutes until just browned. add in a pinch of salt and pepper and chives if you want it. Pour in your heavy cream and wine and lower the heat just a little to medium high heat. Mix it all around and allow it to boil just a bit. Once its boiled a bit. Mix in a little more and lower your heat to low medium and allow it to slowly cook and thicken. For about 5 minutes or until your sauce is noticably thickened. Remove it from the heat and set it aside.

Keep your Gnocchi and your sauce separated. If you combine it and leave it for a long time the sauce wont remain as creamy. It will thicken.Only right when you are about to serve it. Pour your sauce on top of your Gnocchi and you will have a really creamy sauce covering your gnocchi peices.
