Our Jamaican Styled Lunch

My hubby enjoying some good home cooked Jamaican food


Oh but so delicious.
For lunch we had Rice and Peas, Stew Chicken and boiled sweet potatoes with pumpkin.


Each had a unique flavor and was really well prepared. The Rice and Peas which is rice and red kidney beans is prepared in a new way to what I have ever done so as I am sharing all of these recipes for you. I am keeping them for myself as well. That way whenever I want to make it I can also come to my blog, get the recipe and cook  ;  )

Rice and Peas
1 cup Basmati rice
1 cup water
1/4 cup coconut milk
a little ginger (mashed up)
1/4 cup (drained) canned red kidney beans

Put your water in a pot on high and let it boil. Once boiling add in your coconut milk, mashed ginger, rice and red kidney beans. Mix all together and let boil for about 30 seconds and then reduce the heat to low. Leave on low and allow to cook for about 15 minutes or until the rice is nice and soft.  Your done. Fluff your rice with a fork and put it onto a serving tray.   (Tip: when removing rice from a pot never use a spoon, as it will make the rice more mushy. Always use a fork, this makes the rice nice and loose)

Boiled Sweet Potato and Pumpkin
Sweet Potato (notice this sweet potato is yellow. But in the US ours is orange)
Pumpkin

First wash well,
Then peel and cut up your sweet potato into big chunks and dice your pumpkin into chunks as well, (with skin on).  Place in a pot with little water and boil for about 20 minutes or until  the vegetables are very soft.
Quick, tasty and easy to do. Enjoy


Stew Chicken
1 whole chicken (about 3lb)
 A splash of lime juice
 1 teaspoon of salt
 1 teaspoon of pepper
 1 onion
 3 stalks of scallion
 1 hot pepper (ideally scotch bonnet)
 1 sweet pepper
 3 cloves of garlic
 1/2 inch of ginger
 3 tomatoes
 Oil for frying
 3 tablespoons of flour
 3 sprigs of fresh thyme (or 3 teaspoons of dried thyme)
 1 tablespoon of butter
 1 tablespoon of browning
 2 tablespoons of soy sauce
 2 cups of water

  • Wash the chicken with a splash of lime juice
  • Chop the chicken in to small pieces.To resemble leg quarters
  • Chop the onion, scallion, hot pepper, sweet pepper, garlic and tomatoes in to small pieces, grate the ginger and mix the flour in 1/4 cup of water.
  • Season the chicken by rubbing in salt, pepper, thyme, onion, scallion, hot pepper, sweet pepper, garlic, ginger and tomato.Leave to marinate for one hour
  • Scrape the seasoning off the chicken and fry in the oil until the chicken is sealed (about 5 minutes).
  • Remove the chicken and drain off the oil.Melt the butter in the saucepan and fry the onion, scallion, hot pepper, sweet pepper, garlic, tomatoes and thyme for three minutes
  • Add the water, soy sauce and browning and simmer for five minutes.
  • Stir the flour/water mixture in to the stew then add the chicken.Simmer for five minutes, occasionally stirring gently.
  • Serve with Rice and Peas

  2. I can't believe I found this! When I went to New York and tried Jamaican food I fell in love with it! I kept wondering what was in there! The pictures look just like what I tried over there, and I remember ordering stew chicken, and the rice was oh so good! now I just have to go grocery shopping to make this! thank you!:)
