Kerrys 'Coconut Dream'


Meet Kerry, She is a wonderful friend of mine who happens to be a Jamaican. She is the great cook that I spoke about in my blog post from yesterday. She has the right touch when it comes to cooking. She is teaching me all about the Jamaican Cuisine.

As I mentioned in Yesterdays post. I am sharing one of her recipes with you. She made this 'Coconut Dream' and it was a dream indeed. It finished in about 5 minutes  :  )


Ingredients
1 fresh coconut shredded
condensed milk
1 pinch freshly ground nutmeg
3 whole cloves
1tbsp butter
1tsp vanilla extract
1 coconut boxed cake mix

Preheat oven to 350F or 170C
All you do is get a boxed coconut cake, add 1 cup of freshly shredded coconut to the cake mix. Add in your milk, oil and eggs as the box describes and blend it all together in the blender.
Grease a muffin tray (In this case she used a flower design muffin tray) and put your cake mix in the tray and into the oven for about 20 - 30 minutes. Once done set aside to cool.

While the cake is in the oven take a pot and add in your butter and condensed milk and allow to melt together with the fire on low heat. Once melted add in the rest of your coconut which should be about 1 cup and a half, your cloves, vanilla extract and nutmeg and mix it all in and continue cooking on low for a few minutes until it all thickens up a bit. 

Your done, then pour it all on top of the cake while still hot and add a few cherries if you'd like and they are warm, delicious and ready to serve.

  4. Hi Elise, I baked another batch of coconut dreams this week and added some raisins they came out okay and were finished pretty quickly.. We missed you and your husband :)
