Carne Seca na Moranga
This last week as I was in Brazil, I had the pleasure to go to Bahia. And there I had the greatest dish ever. It is as delicious as it is unique. I have never seen nothing like it before. But my oh my was it delicious.
Doesn't that picture up there look good. It really is THAT good. You HAVE TO try this. If you don't you are really missing out. Big Time.
It was by eating great dishes like this that I gained 10lbs in 1 month (Who does that...) 10lbs its unbelievable. But if I could do it over again I would do it all the same I wold still eat all these great meals. It was that worth it. Really...
INGREDIENTS:
* 1 ripe pumpkin
* 3 tablespoons of oil
* 1 medium onion
* 2 cloves garlic
* 500g Jerked Beef Paineira (Or if you cannot find that) Whole Beef (preferably Brisket)
* 1 red pepper * 1 green pepper
* 1 cup of cream cheese
* 200g mozzarella
How to prepare:
Cook your beef in pressure cooker with only water for about 40 minutes or in a regular pot for about 1 hour and a half, let cool and shred.
While the beef is cooking, open squash at the top like a pot and lid.
Remove a little of the pulp and set aside. Just like the picture below
Place the pumpkin in a big pot with water filled till half way. Cook on low heat for about 20 or 30 minutes.
If you can it would be even better if you were to do it in a double boiler. Get a pot and fill it half way with water, then get another pot or a perforated pot and place it on top of the water with the pumpkin inside. (it helps to ensure that you don't burn the pumpkin)
In a separate saucepan sauté the onion and garlic, and add in the shredded beef, peppers and pumpkin pulp.
Cook until the pumpkin is very soft. season your dish but be sure to not over salt.
Preheat your oven to 350F/165C
Once your pumpkin is finished cooking. Take it out of the pot and put it into an oven safe tray and line the bottom and sides of your pumpkin with a few pieces of sliced mozzarella leaving a little off the edges and then cover.
On top of the mozzarella put a few spoons of cream cheese, then place the stew (beef mixture) in the pumpkin on top of the cream cheese, close with lid and bake for about 30 - 45 minutes
MMMMM.....Ready to serve.
