Shortbread Cookies

I have another recipe for you, that I started making recently. Quick easy and delicious.
Make Shortbread cookies in minutes with only 3 simple ingredients. Comes out just like store bought and for those who are health conscious; you can adjust the amount of sugar you use in your recipe or even use an alternative sugar such as sweeteners to make it even healthier and sugar free.
Now if you want to go for an all out healthier version that you can eat often without feeling guilty. You can switch the flour for oat flour and the sugar for your favorite sweetener and twalla! Ive done it before like this and my husband absolutely loved it. Now of course if you want the store bought melt in your mouth shortbread cookie taste then stick to the original recipe for the Real Thing!

Quick recipe, easy to make, fun to make with the kids and all around cost efficient and absolutely delicious. Feel free to play with the recipe and you can add in different flavors or even put a dent in the top and add your favorite toppings. Ive tried guava paste on top and it was absolutely delicious. try it and write in the comments how it turned out for you.
Ingredients
1 cup flour
1/3 cup sugar
1/2 cup butter
Directions:
Preheat your oven to 350F or 180C
Add everything to a bowl and mix together with your clean hands or with a wooden spoon. (Note: For this do not use an electric mixer as it will put too much air into the matter and make it more like a hard cake than like cookies.) Mix until all is incorporated. Then take a piece at a time and roll it into a ball and then smash it down lightly with the palm of your hand to flatten it into the cookie shape. The site that you make the cookies will be the exact size they will come out. They won't grow in the oven. In order to get the nice lines on top you can use a fork and lightly roll it over the top of the cookie to form the design.
Place on a baking tray with aluminum foil or baking paper underneath and refrigerate for about 20 minutes before placing in the oven.
This step is crucial. Because these are short bread cookies or another name for it is "Butter Cookies" They are made with a high amount of butter and if the butter melts too much because of you working it in your hands and or sitting out on the counter for too long as you prepare them. By the time you place it in the oven you will have flat cookies that come our nothing like this. So very importantly is to not keep it out on the counter for too long and to not skip the step of refrigerating them. You can put in fridge or freezer. Either one is fine.
Once that is done; pop it in the oven that is already preheated and bake for about 20 minutes or until the bottom of your cookies start to get golden brown. Your Done!
Leave it out to cool for about 15 minutes and feel free to put it in your favorite cookie jar or an airtight container for storage. Enjoy.
