White custard cake with prune sauce


 Also known as Manjar de coco com calda de ameixa this desert is used a lot in the portuguese cuisine and is absolutely amazing and compares to the Brazilian Pudim de Leite or Flan. The consistency is just about the same but its made with condensed milk and coconut milk and has a soft creamy firm texture and is served with a sweetened jam like prune sauce drizzled on top. Absolutely delicious and once you try it you can't get enough of it.

Made in a bundt pan with only 5 ingredients, it doesn't even go into the oven, its really quick and easy to make, and can be done in mere minutes and enjoyed the same day.

Ingredients
2 cups milk
5 tbsp cornstarch
1 can condensed milk
1 cup coconut milk
1/2 cup sugar
1 cup water
4 oz prunes

You can start by making your prune sauce. In a smalll pot add in your prunes, sugar and water and on medium low heat cook it all together until it begins to boil and thicken. The prunes will soften and it will all become a jam like syrup. Once it becomes like that you are done. Set aside

Then very lightly butter your bundt pan, and set aside.

In a bowl adding a little at a time to not form clumps. Dissolve the cornstarch into the cold milk. Once it is completely dissolved add it into a small pot and add your other ingredients into the mixture your coconut milk and condensed milk.

Stir constantly On low heat until it noticeably thickens and begins to boil. Allow to cool for about 45 minutes and then pour mixture into your lightly buttered bundt pan. Refrigerate for about 3-4 hours before carefully turning it over and serving with your prune sauce drizzled on top.
