BBQ Sweet Potato Shepherds Pie

The Recipe of the Day: Believe me this is definitely a crowd pleaser in my house. An interesting twist to an old classic shepherds pie Recipe. Something so simple and seemingly weird. But you've gotta try it to see how good it really is. Here is how: BBQ Sweet Potato Shepherds Pie Servings: 6-8 Prep Time: 10 min Total Time: 25 min Source: Elise Jackson Ingredients 6 sweet potatoes 1.5 lb ground beef or turkey 1/2 onion diced 1/2 pepper diced 2 garlic cloves crushed 1/4 cup of milk 2 tbsp butter 1/2 cup bbq sauce (May need a little more) 1 tbsp olive oil Seasoning: Lawrys all purpose seasoning, black pepper, garlic powder, onion powder, salt Fill a big pot with water and set it on the stove on high heat. Till it starts to boil.  Peel and cut your sweet potatoes into big chunks and put it into the boiling water. Let it cook for about 15 minutes or until the potatoes are very soft. Ripe Stuffed Plantains

I personally love ripe plantains, so just the idea of having them stuffed with anything I want, sounded like a treat to me. Heres a recipe that I tried not to long ago. You can stuff it with anything really. Another great thing to try stuffing it with is chorizo and cheese. My only suggestion is if you don't want it extra soft and mushy take it out of the oven a little sooner. But all around quick and delicious recipe. Ripe Stuffed Plantains Servings: 4 Prep Time: 5 min Total Time: 45 min Source: Elise Jackson Ingredients 4-6  Ripe Plantains 1 lb ground beef (or ground turkey) 1 onion diced 1 pepper diced 1/2 cup mozzarella cheese Seasonings of your choice (My suggestion: Lawrys all purpose seasoning, black pepper, salt, garlic powder) Directions Preheat your oven to 400F Peel and slice your plantains in half, being careful not to slice it all the way through.
