Spinach Balls


Prepared in about 10 min and Similar to something like a meatball, these Spinach balls are a guilt free eating, with only about 25 calories per ball you can enjoy as many as you want and not feel bad about it.  Meatless or with a few of your favorite diced meats in the mix, it is great either way. I've tried them both ways and honestly didn't  notice a difference with or without meat, they are delicious.

Great for a light dinner or afternoon snack. My sister said she tried it for breakfast and enjoyed it a lot. Goes great with naan bread on the side and with your favorite dips such as parmesan, spinach and artichoke (one of my favorites). Take a look at how its done.

Spinach Balls

Ingredients
1 container of fresh Spinach (16oz)
1/4 cup bread crumbs
1/3 cup shredded cheese
6 eggs
Optional: Meat of your choice (must be fully cooked)  bacon, sausage, deli meat etc

Directions

Preheat oven to 400F
Roughly Dice all your spinach, place it in a big bowl, add your bread crumbs, eggs, cheese and optional meat. Mix everything in with your hands until well incorporated. Start forming them into balls by squeezing it together until it sticks; form a ball in your hand.  If it's not sticking together well enough, add another egg to the mix.

Lightly oil an oven tray, and add your ball to the tray. Place in the oven and bake for about 15-20 min or until the balls are golden brown around the edges. Enjoy.
