Fish Stew


A great stew to go with your rice, mashed potatoes or whatever else. Nice and warm with so many great blend of flavors. This fish dish will be sure to keep you wanting for more.

Ingredients
2 full onion sliced into thin circles
2 full tomato sliced into thin circles
2 full bell pepper sliced into thin circles
4 tilapia filets ( this can also be substituted for the fish of your choice)
1 tbsp olive oil
3/4 cup tomato sauce

Take a frying pan and put in your olive oil, then layer it up inside with one at a time your onion, bell pepper then tomatoes. (make sure to only use 1 onion, 1 tomato and 1 pepper. You will need them for later)

after that  add in your tilapia fillets (add in a pinch of salt and pepper)

Now turn your fire on to medium heat and allow to heat up for about 5 minutes
As you see in this picture above. Add in your tomato sauce on top of the fish. This helps to give it some color directly on the fish and some add flavor all around. Reduce your heat to medium low and now add your second row of onion, pepper and tomato.sandwiching in between both layers your fish.

Reduce your heat even more. Cover and allow to cook for about 15 minutes on low heat. All of the vegetables as well as the fish and tomato sauce will release its juices which will be all contained and flavors all mixed in together. creating your yummy stew.

Your done,  now allow to cool and serve warm along side your veggies and rice. Make sure to scoop it out with some sort of spatula to avoid a mess.
