Roasted Asparagus with a lemon vinaigrette
Some people are like OMG I hate veggies... but hear me out.
I tasted asparagus for the first time a few years ago and didnt like it at all. First of all it already looks weird, is not a common vegetable and I had no clue on how to cook it. But on my journey to healthy eating my husband and I decided to try new veggies besides the common ones we normally use - broccoli, corn, sweet potatoes etc.
I found this recipe online and added my own touch to it. This is amazing, it kicks up the taste of the asparagus. You get a nice light crunch with a mouth full of fresh flavor. Amazing...

Ingredients:
Asparagus
1 bundle fresh asparagus - Cut about 1 1/2 in. off the stem from the bottom it is normally woody
2 tbsp extra virgin olive oil
salt and pepper (kosher salt adds a really good flavor)
Vinaigrette:
1/2 tsp mustard
1/2 lemon juice squeezed
1 tbsp olive oil
salt and pepper (kosher salt adds a really good flavor)
Preheat your oven to 400 F. Rinse your asparagus and In a baking tray line it up nicely in a single layer. Drizzle in your oil, salt and pepper mix it in evenly with your hands for it to coat the stems. Bake in the oven for about 8 minutes until cooked yet a bit firm.
Separately whilst your asparagus is in the oven make your vinaigrette. In a small bowl mix together your mustard and lemon juice, then slowly add in your olive oil and continue mixing. Season with a little salt and pepper and mix again.
Remove your asparagus from the oven. Plate it and lightly drizzle your sauce on top. Can be eaten cold or hot. I've tried it both ways and like them either way. Really good a must try.
