Cold Broccoli Vinaigrette

Is eaten as if it were a salad. You simply take your broccoli cauliflower and carrots; cut them up into bite size pieces and wash them well. Then throw them into a pot of boiling water for a few minutes until they are soft to your likeness. (I personally like them a little on the crunchier side so I leave them to boil for about 8 minutes) Set aside to cool and even refrigerate for a nice coldness.

Separately you make your vinaigrette sauce by mixing in a small bowl

1 tsp lemon juice
1 tsp honey
1/2 cup red vinegar wine
1/4 cup olive oil
pinch of salt and pepper

Now throw this nice vinaigrette sauce on top of the broccoli, cauliflower mixture and serve. Super yummy and refreshing, chilled with a nice meal.
