Peach and Blueberry Cobbler

There is nothing like a nice warm peach Cobbler in the summer  time; topped with fresh whipped or ice cream.  Try it for yourself



Ingredients

8 Peaches
1 cup Blueberries
1 cup sugar
4 tbsp flour
5 tbsp butter


Preheat your oven to 350F or  180C.  Wash your fruit then cut up your peaches into chunks. In a big bowl put your peaches and blueberries, sugar and flour, mix it all together with your hands until well absorbed.Spoon in a few chunks of butter scattered on top. (For caramelization) Place it all into a pyrex.  Then on the side make your bread biscuit  crust.



Biscuit Recipe

2 cups flour
1/4 cup sugar
1/2 tsp salt
2 tsp baking powder
2 tbsp butter
3/4 cup milk

In a bowl mix together flour, sugar, salt, baking powder and then the butter (but mix in butter with hand,  until dough looks kind of like sand) then add in your milk a little at a time until the dough comes together.


Place this biscuit  recipe mixture scattered out on top of the fruit in the pyrex. Bake in the oven under 350F or 180C for about 45 minutes or a little more. You want the crust to be cooked yet soft and the fruits inside to be  juicy, soft and caramelized.
