'Chickonaise' ( a.k.a.) Mayonaised chicken


Absolutely scrumptious, in every bite an adventure to your taste buds. This 'Chickonaise' (chicken cooked in a delightful mayonnaise sauce) is amazingly good.

Try it for yourself. I made it for lunch today and enjoyed every bite. I served it with cooked collard greens (kale) Which I simply boiled in water and salt for 35 minutes. and chunky mashed potatoes which you can find the recipe for in the blog titled 'Creamy mashed potatoes' from April 29th.


Ingrediants
1 tray of chicken thighs
1/2 cup mayonaise
little bit of oil
seasonings (lawrys all purpose seasoning, salt, pepper, paprika)
1 cup chicken stock
1 diced onion
4 cloves crushed garlic
1 cup of tomato sauce
1/3 cup cooking wine

Method
Put all of your already cleaned chicken into a big pot turn the fire onto medium high heat (find out how to clean chicken properly in my blog post titled 'clean or dirty chicken' from February 8th.) Then pour in a little bit of oil and mix it with a wooden spoon until all incorporated. Then add in your seasonings (find out how to properly season from my blog post titled 'It's all in the seasoning' from Feb 9th) add  your chicken stock mix it well until incorporated.Add in your diced onions and garlic to the pot mixture and now add in your tomato sauce and mix well. Add in cooking wine and mix very well until it is all very well incorporated.

Cover your pot and let it cook for 35 to 45 minutes until cooked thoroughly. Once that is done. Take some of the  hot liquid from your pot mixture and add it in a cup with your 1/2 cup mayonnaise. Mix your mayonnaise well with this liquid to make it light and creamy with no lumps. Then you add it into your pot mixture. Mix it well into the pot and cook for another 15 minutes until soft and tender.
