Designing you meal

                   Today for lunch this is what I had, and I am going to teach you how to make it.

My lunch was rice, corn, broccoli,plantains, and winterized chicken thigh ( a delicious recipe that I learned from a great friend of mine). As you can see this meal is healthy and delicious and oh boy, was it good. Note: I used color to make it more appealing in this meal I have 4 - 5 different colors. Read the 'Color it up' post below for more information on that. Ok, lets get to how I made it.

Rice
First I made my rice (refer to the 'How is your rice?'  post for how I made this rice)

Veggies
Every one of my meals has veggies I am a strong believer in eating veggies. They aren't bad tasting once you know how to cook and season them. they are a very important part of every meal and  very needed for your health. More on the importance of veggies another day. But I like to buy frozen vegetables. Not because it is quicker to make (which it is)  but because they taste great and tend to have more nutrients than the fresh ones.

The Broccoli and Corn


(you need - water, garlic salt,  frozen corn, frozen broccoli)

I got a bag of frozen broccoli florets and a bag of frozen corn. In two separate pots I put a very little bit of water about 1/4 cup of water in each pot then I added a little garlic salt in the pot with water and covered it until it boiled about 2 minutes. Once the water boils; I add my corn in one pot and my broccoli in another pot and I cover it and leave it to boil again about 4 minutes. (You don't want to leave it boiling for too long or else it will be mushy and tasteless. ) Once it boils, you turn the fire off and drain the little bit of water that is left over (which should be close to none). Your done then you put the boiled tasty veggies on a serving dish.

That was simple, quick and easy and took about 5 minutes. That's not so bad now is it. Incorporate vegetables into every meal. It is important for health and color.

The Plantains


(You need Plantains or Bananas and butter)


I took a frying pan and put about 1 spoon of butter on it and turned the stove to a medium temperate. While  the butter began to melt. I cut my plantains into 4 once long wise and once in half. Then I put my plantains in the frying pan and lightly fried it in the butter on one side until it was golden about 2 minutes and then I turned it over with a wooden spoon and let it fry on the other side until lightly golden about 2 minutes.

Your done. Nice golden, tasty plantains in 5 minutes.

(When buying Plantains you should get the ones that are very ripe. When the peel is yellow and black. That way it is sweet and tastes better and softer when you cook it. )



Winetized Chicken thigh


(You need - Chicken thighs, white cooking wine, turkey slices, oil,salt, pepper, lawry's, garlic salt (or seasonings of your choice)

Instructions -
Preheat the oven to 400F
I got Chicken thighs and peeled off the skin and fat with a sharp knife, then I poked wholes in it.( this is good to do, in order to get the seasonings to go in the chicken as well instead of just sitting on top) I poured some cooking wine on it (this helps remove the slime from chicken) after doing that I washed it in water to clean it completely. Once that was done I poured a little bit of oil on the chicken (this helps the seasonings to stick better) and put a little bit of each seasoning on it (not too much but enough to cover it) Then I rubbed it in with my hands to get the seasonings on all of the chicken thigh pieces. Put it in a pyrex or oven tray and put it in the oven without covering it with anything. Leave it in there on 400F for about 1 hour or until it is golden brown. After 45 minutes cooking it you can flip the chicken over to the other side in order to let it brown on both sides.

While it is in the oven cooking you can get a pot and make the wine sauce.  Cut  about 10 turkey slices into strips (this is the turkey slices you use for sandwiches) In a small pot put a little bit of oil on the bottom (about 1 teaspoon) and add your turkey slices to it. Fry it for about 3 minutes until it is browned. Once it is well browned add about 1/4 cup of wine  to the turkey strips and let it boil for about 1 minute (only). Turn the fire off.

Once the chicken thighs in the oven are ready and well browned, evenly pour your wine and turkey sauce on top of the chicken thighs. Make sure to get wine on all pieces.

There you go your 'Winetized Chicken' it is mmm mmm good.   Enjoy...

  3. Hello Anonymous. Look at this link in regards to frozen veggies loosing their proteins and healthy stuff. It is actually the opposite way around. The longer fresh fruits and veggies stay on the shelf they loose that. Take a look. http://www.pamperedpeeps.com/frozenveggies.htm
