Slow Cooked Oven Roasted Beef

Image
Mmmm... There is nothing better than a slow cooked, oven roasted good piece of soft, succulent melt in your mouth, flavorful beef. There is no work into making this type of beef at all. The oven is the one that does all the work. Ingredients Beef Olive Oil Seasonings of your choice Onion & Peppers Cut into nice slices Take your beef and simply rinse it well. Season it by putting a little oil first then the seasonings of your choice such as salt, pepper, garlic or onion powder and whatever else you'd like. Rub it in well to get all incorporated. (Be extremely careful not to over season) Turn your oven on to 300F or about 150C. Lightly grease your pyrex and add your onions and peppers to the bottom of the pyrex. Nicely sit your beef right on top of the sliced onions and peppers. Cover with aluminum foil and put it in the oven. Allowing to cook for 3 hours. Then remove the aluminum foil and cook for another 30 minutes to one hour. Your done. Delicious soft to the

Chicken Parmesan

Look how yummy this looks. Ingredients Chicken breasts (cleaned and sliced in half long wise to give two breasts in one)  shredded mozzarella cheese bread crumbs tomato sauce seasonings (olive oil, lawrys all purpose seasoning, salt, pepper, garlic salt, minced onion) Take your chicken breasts and thoroughly clean it (check in the search box on how to clean chicken, you will see my previous blog post on how to properly clean a chicken post date was Feb 8th 2012) Then season your chicken with a little of each seasoning, (the seasonings mentioned above are the seasonings that I chose to use but feel free to improvise and use your own) In a separate bowl mix your eggs and in another separate plate spread out your bread crumbs. At the same time set aside a frying pan with a little olive oil inside and set the fire on low medium heat then dip your seasoned chicken breast into the egg wash and then into the breadcrumbs (the point of the dipping is to create a l

Wild Rice Mix

Image
This wild rice mix tastes amazing. It is cooked just as simply as any other rice.  (To get the perfect rice every time, follow this recipe)  Yet is a mixture of white rice, brown rice, wild rice and red rice. Tastes great, is healthy, looks nice with all the colors and is a good change up from normal plain white rice. Next time you go to the grocery store look for it in the rice isle.

Stuffed Breaded Chicken

Image
I decided to try something new. There is something that I normally make called 'Chicken kiev' or 'Chicken Cordon Bleu' Which is chicken stuffed with either turkey and cheese or with garlic butter for instance. That way when you cut into the chicken you have that gooey cheese coming out or the butter oozing out of the chicken. ( I'll put up the recipe for this soon) But I made something similar. I decided to to stuff my chicken this time with turkey ground beef and cheese. Then breaded and baked it. Topping it off with an onion, tomato and pepper sauté. Served alongside with a semi sweet spaghetti and turkey ground meat sauce. This was made by firstly cleaning  and Seasoning my chicken breasts. Then slicing them directly  in half long wise to make it thinner. I separately cooked my ground beef simply in oil and garlic with a touch of salt and pepper. Once cooked. I allowed it to cool and scooped a little of it into the center of my already cleaned and s

Tiramisu

Image
Have you ever tasted Tiramisu? It is an Italian coffee dessert, Those who enjoy coffee will really like this one. I for one do not like coffee AT ALL. I hate it. Don't like the smell, the taste, the nothing... But yet and still I love this recipe of Tiramisu because it has a Chocolatey flavor with a hint of coffee. There is no overpowering coffee taste. But the coffee flavor is definitely noticeable. Ingredients 2 packs of lady finger hard cookies 3 eggs 3 tbsp sour cream 1 pack cream cheese 2 cups heavy cream 3/4 cup sugar 1 cup cocoa powder 1/2 cup already made fresh brewed coffee 1/2 cup warm milk Make your regular cup of coffee as you regularly do, and set it aside. Separate your 3 eggs, yolk from whites. Take your whites and beat them well with an electronic mixer or whisk until light and fluffy. More or less 10 minutes. Then in a separate mixing bowl combine half of your sugar and heavy cream and beat well until also light and fluffy. In yet another

Chicken Bites

Image
This is really made with 2 simple steps. Serves as a great finger food, snack or junky meal. Ingredients Oil Chicken thighs ( skinned, cleaned and lightly seasoned the way you like) Mayonnaise Ketchup Tips: How to properly clean your chicken How to properly season chicken Preparation Step 1: Preheat a pot with oil. Then Once you' ve got your chicken cleaned and seasoned. This is the hard part. Cut your chicken into 2 or 3 chunks. Try cutting through the bone. (PLEASE BE EXTREMELY CAREFUL NOT TO CUT YOURSELF. IF YOU CANNOT CUT THROUGH THE BONE THEN JUST CUT AROUND IT. It'S NOT WORTH YOU CUTTING YOURSELF) Normally it works if you just barely cut the bone with the knife and you then bend it with your hand and snap it. The bones break easily. Step 2: Throw it into the already heated pan of oil and let it deep fry for about 5 minutes or until nice and golden. Make your dipping sauce by just mixing a bit of mayonnaise with ketchup until you get the taste you li

Seafood Gnocchi

Image
I had a few guests come over my house just the other day and I wanted to make something amazing; Something I hardly ever make and something really delicious for my special guests. One by one I will put up the recipes for each thing that I made. Everything in the menu was really yummy. I decided to make Gnocchi from scratch along with a seafood white wine sauce. For those of you who are not familiar with what is Gnocchi; it is compared to pasta but yet it is not pasta. It is made out of potatoes but does not taste like it. It has a inquired taste of its own and absorbs well the flavor of whatever sauce you put it in. For instance, if you dont like seafood make your own sauce. You can make a Gnocchi with a red ground beef sauce or with a completely different sauce all together and it will taste great. With this recipe. The Gnocchi as you see is really simple to make. Can be done in a matter of minutes. Its basically making mashed potatoes and then just adding flour to the mixture

Snickers Ice Cream Cake

Image
Can be made easily in a matter of minutes. All you need is 3 ingredients:  Ice-Cream of your choice (I chose snickers Ice- Cream, but you can choose strawberry, chocolate or whatever else) Whipped Cream  Cake (preferably Vanilla Pound Cake) or else make your own  Cake recipe  (whatever flavor you want) (Make sure you do all of these steps as quickly as possible in order to not have your ice cream melting) All you do is cut your cake into 3 layers and in between each layer fill it with a thick layer of ice-cream  then spread it evenly. Making layers. Cake on bottom, ice-cream, cover with cake again, then ice cream then cover with the top layer of the cake. Once you've got all your layers cover the cake with whipped cream and put it in the freezer for about an hour. If you want; for an added touch place a little shredded coconut in the oven for about 5 minutes just to lightly toast them and sprinkle it on top for an added touch. Enjoy and God Bless
